A life quest that became a service for others
Nuvi is born out of the life experience and pursuit of a man. Escoffier – Ritz Paris trained after a long career in general management for multinationals, Eric faced the same challenge again and again while trying to reconcile a busy professional life with sports activities while entertaining an active social life: how to eat healthy in an urban environment plagued with flashy, enticing proposals, most emanating from the food industry.
Landing in Shanghai has been an eye opener with the profusion of food delivered faster than one can make it. All centrally prepared in advance — hence packed with stabilisers, emulsifiers, preservatives, colour and taste enhancers to allow this level of reactivity and constancy.
This time in Shanghai and in Eric's life, it was different. Having run the best source of Italian artisanal food ingredients in UK, Eric knew that nutritious, tasty food is 'slow food', not 'fast food'.
Years of efforts to decode the wisdom of eating healthy and trying to decipher the dietary science — and most importantly differentiate it from the marketing buzz words, fashions and other social media pedalling having more to do with getting attention than caring. The outcome of all these years seeking the path of eating healthy led to two realisations:
● Eating healthy — dietary knowledge is highly specialised knowledge covering so many domains of expertise that it requires considerable efforts to become sufficiently discerning.
● There are as many ways to eat healthy as there are individuals! The only healthy nutrition for an individual is the one tailored to that very individual — their bio, their health status, their goals as well as their allergies, intolerances and dislikes.
